Chicken Parmigiana Pastorelli |

Serves 4
4 whole boneless and skinless chicken breasts 1/2 cup of flour 1 egg 2 tbs. water 1 cup Italian seasoned bread crumbs 4 tbs. butter or margarine 2 cans 8oz Pastorelli Pizza Sauce 1 lb mozzarella cheese, sliced or grated
Wash breasts and dredge in flour. Beat egg well with 1 tbsp of water. Dip breast in egg mixture and then coat with seasoned bread crumbs. Fry in butter or margarine until golden brown. Coat bottom of 8 1/2 x 13 cooking dish with 1 can of Pastorelli Pizza Sauce add the chicken breasts, cover with other can of Pastorelli Pizza Sauce and top with the mozzarella cheese. Bake at 350 degrees for 45 minutes. |
